Goals for September 2015

Personal

Monday:
Breakfast: Oatmeal with Bananas - Sub with Almond milk and Truvia -THM E
Supper: Lime Shredded Pork with Squash- THM S

Tuesday:
Breakfast: Keifer with bananas - THM-E
Lunch:   Egg boiled/salad - THM S
Supper: Cranberry Chicken with Broccoli - THM S, I replace the cranberry sauce with cranberries, gluccie, and some sweetener

Wednesday:
Breakfast:  Fried or scrambled eggs - THM S
Lunch: Leftovers
Supper: Beef Roast with Carrots - THM S - I tend to give most of the carrots to my children

Thursday:
Breakfast:  Peaches with cottage cheese - THM-E
Lunch: -Eggroll in a Bowl- THM S
Supper:  Apricot Ginger Chicken with Green Beans - THM E - I used apricots, sweetener, and glucci in place of the jelly.

Friday:
Breakfast: - Fluffy Pancakes- THM S
Lunch: - leftovers
Supper: Fish and - Green Bean Fries -THM S

Saturday
Breakfast:  Quiche - THM S - I skip the crust
Lunch:  -Beans, Salsa, Greens, and cottage Cheese -THM E
Supper:  -  Tacos - ground beef with this taco seasoning - THM S

Restful Sunday:
Breakfast: Cinnamon Rolls with Yogurt -THM E
Lunch: Pizza -THM S and Seven Layer Salad - THM S sub Truvia for Sugar
Supper: Leftovers

Peaches and Cottage Cheese THM E

I found a delicious addition to my breakfast menu.  It is kinda my summer breakfast go to.


Peaches and Cottage Cheese
THM E

1 cup cottage cheese
1/2 peach cut into chunks
Sprinkle of Uncle Sam's cereal - optional
1 TBSP of sweetener if desired - I find the peaches normally don't need it

I peel my peaches with a potato peeler and cut it into chunks.  Mix with cottage cheese and sweetener if desired.  Sprinkle with cereal for that crunch.  

This is 1 serving.

THM OAMC Crock Pot Cooking Session 11

I am so excited about this new menu. Two friends and myself picked this menu.  I took most of the recipes from New Leaf Wellness.  They all seem to be easy and simple with no extra fillers. Enjoy!



Crockpot Chicken Fajitas
Crockpot Beef Fajitas
Crockpot Cranberry Chicken - Instead of cranberry sauce -I am using a bag of fresh cranberries, 1 cup sweetener, and glucci to thicken like cranberry sauce.
Crockpot Meatball Veggie Soup
Crockpot Turkey Black Bean Chili
Crockpot Mexican Chicken Soup - I precook the Turkey and rinse to make it low fat
Crockpot Lime Shredded Pork
Crockpot Chicken Philly Cheesesteak
Crockpot Red Pepper Chicken
Crockpot Italian Chicken

I use a THM friendly sweetner instead of Honey, sugar, etc.   I make each recipe for 6-8 servings x 2 so I end up with 20 meals.
