My favorite Aldi dinner recipes from the Trim Healthy Mama Cookbook



I typically shop at Aldi. The recipes listed below can all be made with things I can purchase at my local Aldi.  I use their Stevia sweetener in place of the sweet blend mentioned in the recipes.   I rinse my ground beef.

My review for THM Menu from Feb 19 - 24, 2018

I have made so many NEW to me recipes from the Trim Healthy Mama Cookbook, I wanted to record what we all thought of them. Some were hits and some were not. A few we didn't get to make so I will add them to another menu to try.  Not sure I will ever make ALL the recipes from the cookbook, but I do want to make good use out of the book. I tend to make the same things over and over and I want to get out of that rut... for a now anyway.


Breakfasts:
Thin Mint Chocolate Chip Skake - THM S THM Cookbook p.410 - this was one of my favorites for the week. But then I LOVE all things minty. ;-)
Bring on da Buttah Pancakes THM S THM Cookbook p.262 - I didn't make these
Strawberry Cheesecake Shake - THM S THM Cookbook p.412 - another delicious shake. A keeper for sure
Breaggy Fry Up THM S THM Cookbook p.244 - I didn't make these
Banana Oat Shake - THM E THM Cookbook p.413 - This one was not my favorite. The oats just didn't do it for me. It was like a muffin in a smoothie. Not my thing.

Snacks:
Lemon Curd Layer Cake - THM S THM Cookbook p.299 - This was so much better than I expected. The best recipe this week!
Banana Meringues THM FP THM Cookbook p.317 - The taste was fine. I just managed to undercook them.  I have talents I tell you!  Any ideas on how I can save them????
Cobbler in a Jar - THM S Cookbook p. 335 - This was ok. Seems a bit on the dry side compared to what kind of cobbler I am use to. I added milk to it and warmed it when I ate it. That helped. I would like to try again, but perhaps use less baking mix and more liquid?

Supper:
Buttah Chicken THM S THM Cookbook p.49 - We all hated this recipe. I wanted to love it so much. Not sure I will try again.
Slow Faijitas - THM E THM Cookbook p.53 - I like these on the stovetop, but not the crockpot. I prefer to have the veggies slightly crispy and not soggy. But the flavor was good!
Lemon Herb Drummies - THM S THM Cookbook p.51 - We loved the flavor, but again the crock pot kinda ruined it for us. Seemed like they were perhaps cooked too long. Need to watch the times when I make it next time.
Lentil Soup - THM E THM Cookbook p.89 - We preferred this without meat. I love a HOT soup.
Cabb and Saus Skillet THM S THM Cookbook p.58 - Everyone LOVED this dish. They were all so sad we didn't have leftovers. That is saying something!
Perfect Pizza - THM S THM Cookbook p.211 - This is the second time I made this crust. It is the best crust so far that I have tried. It was super simple and the ingredients list etc was super simple. 

I didn't get to meal prep on Monday like I planned to. Sick children had be distracted. So I limped along without prep until Thursday. I then hit is hard and was able to get all the desserts and breakfast smoothies prepped. I did also make the dinner meals most evenings thankfully.  The children were happy to not have to eat eggs and chicken nuggets every day. Not that we do, but they seem to think so. LOL!  I didn't make the lunches because I forgot to get my broccoli from my mom and Aldi was out of mushrooms. Most days we had enough leftovers I just didn't need lunch. The past week I needed EVERY lunch. Life just didn't go as planned with sick children.

I have been making a Singing Canary for myself daily. I need to keep the wonderful seasonal allergies at bay and it seems to be helping. I hope I can keep up with it. Such a simple recipe that I really LOVE and I also wouldn't mind trading it for coffee in the morning... GASP.. I know. Shame on me, but hey, its working folks!

THM Menu for Feb 12 - 18, 2018



I was watching a neat vlog called Our Tribe of 10 a few weeks back and they were going through THT trying each recipe. I thought what a good idea! I have made almost ALL the recipes in the original book, but not the Trim Healthy Cookbook. I have Trim Healthy Table, but there are SO MANY recipes in Trim Healthy Cookbook that I haven't even tried yet. So, I think I am going to try cooking a few more from the Cookbook and see how far I get.  I have made some, so I am going to skip over those, but there are SO MANY I have never tried.

This is the "off week" from my THM New Habits Challenge. Next week we will be starting my new THM New Habits Challenge Round 2. Come join us if you need some accountability and encouragement.  I am hoping to try adding a bit more to my IG, but we'll see. I don't always remember to take pictures, but I want to try.

THM New Habits Challenge 2018

THM New Habits Challenge Round 2

I am wanting to start a few new habits that are THM related this year. Anyone want to join me? The challenge group will run for 6-8 weeks. I am going to pick 3 things to do for 6+ weeks to help me better my THM journey.  Anyone want to join me?  We will start our next challenge on February 18 and end ,March 31, 2018.  THM does not manage or endorse the group’s content.


For the next 6 weeks I want to be consistent in:

-Weekly Meal Prepping.
-Eating Okra at least 3 times a week

-Eat 3 Deep S meals a week. - these can include Skinny Chocolate


If this is something you want to join in and keep me accountable, there are 2 ways to do it. Join my FB challenge group or on IG #THMnewhabitschallenge2018.  If you want to join the group I will expect you to check in weekly with pictures or participating in discussions. I want the group to help keep me be accountable. So if you don't plan to post weekly, the IG challenge might be a better fit.  All you need to "join" is posting a picture of your prepping or meal to keep each other encouraged to keep going.  This group is about building new habits to help us in our journey. If we mess up, that is ok. Just restart again in 3 hours.

Once this challenge is over I will hopefully have 3 new habits along with you! I will have a new set of 3 habits for the next 6 weeks.

So who is in with me????  I will be posting my progress with meeting my 3 new habits and also some suggestion and encouragement to keep us going.

I can say I did well with 2 of the challenges, but I struggled with meal prepping the most. I do a meal prep for my husband, but his is so restrictive I really can't see it working for me. So, I do his and end up leaving mine for later, and it doesn't get finished. I need to step up my game and just DO IT.  I did eat greens almost daily, but after I started I realized I really wanted to add more Okra, so I am going to do it again THIS time to make sure the habit sticks.

THM Menu for Feb. 5-11, 2018

February is here. Shortest month of the year. So lets put it to good use.

So how are you doing?  My daughter helped me make up our menu this week.  We are doing THM together and sometimes I just make food and she's stuck with it.

We are working on our last week NEW HABITS CHALLENGE.  I didn't do as well with meal prepping as I had hoped.  I think for myself I will still be adding it to my next New Habits Challenge so I can actually get this under control.
