Walmart and Aldi Trip, Feb 2, 2013

I know I am a little late posting this one, but I had forgotten about it. It is one of my best price matching trips I have had in a while. $14 for all the items pictures. NOT BAD.  I think it is one of my best runs this year. YAY ME!

Piggly Wiggly Trip Feb 22 and 23, 2014


I did not expect to see so many good bargins at Pig this week. For me Piggly Wiggly is a hit or miss. I go once or twice a month.  Well this week was the exception to the rule. I went 2 times. I hope I can go back again one more time. Total I spent $50, $25 each trip, BUT I got close to 10 pounds of Ground Beef.  Lots of fresh veggies and of course toilet paper, but hey, you don't want to RUN OUT right?  And the cheese was hanging out calling me because we are eating up my stash so quickly.

So now I am set for anything winter is ready to through at me.

Family Dollar Shopping Trip Feb 21, 2014

I rarely stop at Family Dollar. Not because I don't want to, but I don't think of it. Every time I go, I want to go BACK. When I went this past week, I hit the jackpot. $13 for all the items pictured. We will be eating beans for a while. They were super CHEAP.

Cheesy, Spicy Sauced Brussel Sprouts THM S

I think it is HARD to find a good way to eat these tasty morsels without someone turning their nose up at them. I found my favorite way and I want to share it.

Cheesy, Spicy Sauced Brussel Sprouts

Bag of Brussel Sprouts
1/2 cup motz cheese
Baby Ray's Spicy BBQ sauce
3 Garlic, minced
Red Pepper Flakes - optional
Salt N Pepper to taste
Olive Oil to coat

Preheat oven to 350. I cut them in half or sometimes 4 pieces if they are larger in size. Toss Sprouts in a TBSP or so of oil to coat. Lay out on a foil lined pan. Sprinkle with minced garlic, salt N Pepper.  Cook until sprouts are tender. Sprinkle with cheese as soon as they come out of the oven. Let sit for about 5 minutes.   Add Red Pepper Flakes and BBQ sauce to taste. Enjoy.  Serves 2.

Book Review: A Confident Heart Devotional



I REALLY enjoyed this devotional. In the past few years I have struggled with confidence.  I always thought of myself as a strong person and somewhat stubborn. But I didn't have grace or mercy. Now I am struggling to have confidence. I need to be able to be confident, but not in your face. To be strong, but not over powering. I loved how this devotional put into those things together so well. I was sad to get to the end of the book. I wanted to read so much MORE!

Book Review: Grace Based Parenting

I wish I had read this book years ago. Although, not sure I was ready years ago to read it. I have a tough time understanding it, but I do know it works.  Being raised differently makes it tougher to think this approach actually works.  I recommend this book to old and new parents. It is one I could read every year or so for a refresher course.

Book Review: Number the Stars

I really enjoyed the story. I had never even HEARD of the book until last year when our local home school theatre put on a play with the same name.  I really enjoyed listening how they were able to hide the Jews in plain sight. I am in awe of those that were able to help and save the Jews.

Egg Waffle Sandwich - THM S



Talk about super easy, that is what this recipe is. I actually stole the "recipe" from a friend. I put 2 eggs with salt and pepper to taste in my waffle iron. I actually tried to do 4. Don't. I had egg EVERYWHERE. Not a good idea. I cut the waffle in half and folded it with 2 slices of turkey lunch meat and some chunks of cheese.  I let it sit a few minutes until the cheese melted. Yum... who says you need LOTS of carbs for a good breakfast sandwich anyway?

Mediterranean Salad - THM E


I was so excited to TRY this recipe.  I am not sure why exactly. I guess something different? Or maybe it reminded me of the pasta salad recipes I made back in the day when I still ate gluten items.  But alas those days are in the past.

In a Medium serving dish:
1 1/2 cups beans - garbanzo
Dash of Parsley
1/2 pepper chopped
handful of cherry tomatoes, sliced in quarters
2 ounces of cottage cheese
2 TBSP Red onion finely chopped
1/3 cucumber seeded and chopped
1 tsp garlic chopped

Then in a another small bowl mix together:
1 TBSP Lemon Juice
1 TBSP Apple Cider Vinegar
1 TBSP Greek Yogurt
Stevia, Salt, and Pepper to taste

Add the above to the bean and veggies.  Toss to coat. Letting the flavors mix together and sit for a while is best, but if you are like me, you eat it right away. I actually made 2 servings from this and the other serving I set aside for later and the flavor was SO MUCH  better.


Book Review: Seven

Oh my, I wanted to read this SEVEN for over a year. I must say I was disappointed. It was just not that good. I got the meaning or purpose for the book, but it really didn't hold my attention. I was more looking for a book that would help me to better with my "junk", but it was more of a person's story about it. I had to actually make myself finish the book. I really was ready to just not finish. I kinda have a rule, I need to finish a book once I start it. Maybe I need to rethink my "rule"

Book Review; Have A Little Hope

Have A Little Hope was such a GOOD book. Just reminded me to HAVE hope.  Having been in the situation that it seemed that there was NO hope, realizing I needed to let myself HAVE hope. There is ALWAYS hope, because our hope is in HIM, not our circumstances.

Book Review: His Word In My Heart

His Word In My Heart was a book that I needed to read. It was the perfect time to read it as well. I have been struggling try to get myself to memorize Psalm 37 since LAST year. I still haven't done it. "sigh". There are several ideas I wanted to try. At the same time I remembered this summer a friend of mine had posted the Simple Charlotte Mason post about memorizing verses and reviewing etc. I think I hit the jackpot on trying to get these verses hidden in my heart. Once I am able to do it I want to learn to find the right system to help my children review and learn more scripture to hide in their heart.

Book Review: Sky





I thought Sky was a unique book about the resistance for the Jews in Germany.  I had never really heard of this particular person, but the story was interesting. You hear so much about the Hiding Place and Corrie Ten Boom, you forget there are so MANY others who placed their lives on the line to help save others. There are many pictures included in the book as well. That really made the story seem even more personal to me.

Book Review: Beyond the To Do List



 I really enjoyed Beyond the To Do List: Goals.  It is so motivating for me to read books that encourage me to keep working on the goals I have set. I think there is always room for improvement to be able to get goals met, or even making them easier to achieve. If nothing else it is a good reminder as to how important it is to have goals and working toward them. I never use to have any.
