Breakfast: Cinnamon Rolls with Gwen's Bread recipe. Use Truvia and cinnamon for filling with cream cheese and Truvia frosting. Also eat with with Apple Cinnamon p.250 -THM E  
Lunch: Beans with salsa and Cottage cheese
Supper:   Pizza -THM S

Monday:

Book Review: Captivating

This book really was good. I actually was kinda surprised I like it. For some reason I resisted reading it? But when I needed to grab a book quickly to read my eyes settled on this one.  I was not disappointed. I read all but the very last chapter in 1 sitting. That is how GOOD it was. If a man was willing to read  books this is one I would recommend. The author did an excellent job at getting to the heart and soul of the woman. Most of the chapters I wiped away a few tears. My advice... read the book.. it is worth the time. :-)

Book Review: Behind the Veils of Yemen

I was pleasantly surprised with this book. It was not what I expected to read when I opened it either. I found a book about a woman's struggles not really a missionary story like I thought. I found myself able to relate more then I thought I would. I think in some cases we just think missionary or pastor's wives are some kinda of a "super" person. But they aren't. They are JUST LIKE US.  They just happen to be doing something different then we are.

Book Review: Kids and Money by Jayne Pearl

It has been SO long since I wrote a book review. I have read a few books, but I keep putting off writing reviews about it? Not sure why exactly?




I am not exactly sure how I found Kids and Money by Jayne A Pearl. I think I found it at a book sale or someone gave it to me. The other day I knew I would have HOURS of time to read so I grabbed several books that interested me.

We have struggle all along with doing allowances and chores etc. This book really helped me think about it in another way. I always associated allowance with chores. But then the children ONLY want to do chores for money. That was kinda a problem.

The author's ideas were helpful and we were able to give our own spin on it and hopefully we will be on our way to at least a start to money training with our children... or not. :-)

THM S Chicken, Bacon and Mushroom Bake



Chicken, Bacon, and Mushroom Bake
4 chicken breasts cut into chunks
6 slices of Bacon, cut into chunks
8 ounces of fresh greens. We use whatever we have on hand.
8 ounces fresh mushrooms
2 tsp minced garlic
1 small onion minced
1 tsp Italian seasoning
Salt and Pepper to taste
1/2 cup chicken broth
1/4 cup oil - coconut or olive oil
8 ounces shredded motz cheese

Put it together like this:
Preheat oven to 375. Grease 9x13 inch pan. Put chicken in first, then add the bacon over the top.  Add the layer of greens next. Then sprinkle with salt and pepper. Next add the mushrooms.

In a bowl, mix together remaining spices with olive oil and chicken broth. Then pour over everything. Cover with foil loosely 
Bake for 30 minutes  Add cheese and bake for 5 minutes more.

THM Crock Pot Session 2 Shopping List



Meat
14 lbs ground beef cooked - fat drained
1 pkg turkey pepperoni
8 chicken thighs
12-14 chicken drumsticks
54 chicken breasts - 28 pounds of chicken

Canned Goods
2 jars sugar free (16 ounces) Pizza or Pasta Sauce - I like to use Classico Roasted Garlic
16 ounces tomato sauce
4 can Rotel tomatoes with chilies
2 cups Franks Hot Wing Sauce
4 jars no sugar salsa
2 jars chilies or jalapenos
2 cans light coconut milk
2 jars red or green curry paste
4 cans tomatoes
5 - 12+ ounces chicken broth
16 ounces tomato paste

Fresh or frozen vegetables
6 green peppers - chopped
1 large can olives sliced
9 large onion chopped.
2 large cabbages - you will need 28 cabbages leaves PLUS shred the rest of the cabbages for another dish
1-2 bunch broccoli
1-2 head of cauliflower
2 pounds green beans
4 pkg of frozen spinach or 2 pkg fresh spinach
5 onions - sliced

Dairy etc
4 eggs
5 pkg cream cheese
6 cups grated cheese - Motz
1 cup butter

Beans and Rice
3 cups Brown rice
2 cans or cooked from dry -chick peas
2 cans or cooked from dry - black beans

Spices etc
salt
pepper
Worcester sauce
chili powder
onion powder
creole seasoning
cayenne pepper
Glucci for thickener only ?
Italian seasoning
Coconut oil
4 pkg knox gelatin
Balsamic vinegar

This is a small list compared to my LASTS one. WOW!

2 large can olives -  sliced if you buy whole
9 large onion chopped.
2 large cabbages - you will need 28 cabbages leaves steamed until soft - PLUS shred the rest of the cabbages for another dish
1-2 bunch broccoli - chopped
1-2 head of cauliflower - chopped
5 onions - sliced

2 cans or cooked from dry -chick peas  - soak and cook if you choose to do dry
2 cans or cooked from dry - black beans  - soak and cook if you choose to do dry

THM Crock Pot Session 2

I am going to attempt to make a crock pot menu from the THM book. No need to re-do recipes.  And for those of you that are doing the THM eating plan anyway we already have the book right?

Pizza Casserole - THM S p.327 - I am packaging all the ingredients in baggies and then putting the meal together when I put it in the crock.
Cabbage Rolls - THM S p. 312 - I make the rolls and bag them up. I add the other items in another bag to be poured over when I go to make them.
Mexican Noodles - THM S p.348 - I bag things up separate and put it together when I go to cook it.  I add the cabbage in the last hour on top.
Baked Chicken Thighs - THM S p.322 - I bag up the spices and toss it in the the chicken when you cook the thighs.  I do NOT add liquid when I cook up the thighs. Just dump in the chicken and add the spices.
Spicy Chicken Wings - THM S p.323 - I make up the wing sauce and add that to the chicken when I cook it.
