Book Review: Square Foot Gardening in Five Easy Steps



I have read the original book and I really enjoyed this one. In fact I think I will re-read it. It is smaller and a quick and easy read for those that want to get your feet wet with gardening.

Book Review:Eat Sleep Move



I am so glad there are more books out there to motive me to MOVE. The past few books that have been motivating have put an emphasis on sleep. I think I will be trying to get MORE of it. I enjoy reading books like this that help keep me motivated to keep going. Not get discouraged when I fall down. To get BACK UP and moving.

Book Review: Farewell to Manzanar


I had known about the Japanese camps, but never ready anything about them. Although I do understand the reason behind the camps, it is sad that they had to happen. War doesn't bring out the best in people that is for sure. Makes me so thankful I am not one of those people that ended up in the middle of a war between my home country and my birth country.  I think the story, although hard to read and so sad is a part of history that has not really been talked about.  Perhaps because it isn't something we are proud of?

Langos - THM style

Something new I tried. It was inspired by a picture of a yummy dish my brother sent while he was on vacation in Europe. I looked up Langos on Wiki and this is what I came up with for a THM recipe.

First off, I used Gwen's Bread recipe for the bread. I cooked it on my cast iron skillet that is well seasoned.... I just grabbed a handful of dough and carefully flattened it with my hands to make it flat, almost like a pita would be.  So it was "fried" on a skillet, but yet not really. :-) I am sure fried would be even BETTER, but trying to stick without my rules for THM and enjoy the foods.   Anyway, while the dough is STILL warm add...

1/4 cups cottage cheese or greek yogurt for THM, Sour cream is what is traditionally used\
1/2 tsp cajun spice
crushed garlic

Mix together for the base/sauce.

Sprinkle with cheese. I used a SMALL sprinkle for THM E.

DONE, but I like to add...

Veggies you would like for garnish

Tomatoes
Cucumbers
Onions - red is my favorite

I also added dill over the top, just for a fun taste. It was SOOOOO good. I will be adding it to our summer lunch menu I think. We do salads and something that doesn't require making instead of soup. This will hit the spot!

Book Review; Courageous

I was very impressed with the movie and the Courageous book didn't disappoint either. It was different then the movie, which surprised me.  The book answered some questions that the movie prompted.  A book I heartily recommend if you have seen the movie or NOT.

Green Gumbo THM version

This was fantastic soup. And I HATE cooked greens so that is saying a lot coming from ME!

I used this recipe as my base, but I changed it a little because I wanted to THM it for my meals.

  • 2 cups chopped onion
  • 1 cup chopped green bell pepper
  • 1 cup chopped celery
  • 4 cloves garlic
  • 2 bay leaves
  • 1 Tbsp Cajun seasoning 
  • 10 cups water
  • 3 pounds assorted greens (i.e. kale, collards, mustard greens, turnip greens, spinach, chard, parsley, dandelion greens, beet greens), chopped (about 14 cups)
  • Salt
  • 1 pound  Aldi Turkey sausage

I put all but the greens and sausage in the crock pot.  I let it all cook until tender. 4 hours on high.   I cooked up the Turkey sausage and cut into chunks.  Tossed that into the crock with the greens. Cooked until the greens were soft. Enjoy. :-)
