THM Crock Pot Cooking Menu Session 1

This is  my official first attempt to create an ALL THM menu for the crock pot. With summer creeping up I know that I don't want to be slaving over the stove to eat in the heat. So, instead I want to put my "kitchen slave" the crock pot to work.  Wanna join me?  I am choosing 10 different recipes.  I intend to double each recipe so I will end up with 20 meals for the freezer.   The shopping list is for 20 meals. 2 of each. Each recipe serves 5-6 people.

BBQ Chicken - Crock Pot THM E


  • BBQ Chicken - tweeked the recipe from this website.

  • 6 medium unpeeled sweet potatoes, cut into 1/2 inch pieces, about 4 cups
  • 4 large green pepper, cut into strips or cubes, about 2 cups
  • 2 large red pepper, cut into strips or cubes, about 1 cup
  • 4 zucchini, chopped, about 2 cups
  • 4 cups chopped onion
  • Gluccie to thicken
  • 4 pounds Chicken Breasts
  • 4 15oz cans of tomato sauce
  • 8 tablespoons THM brown sugar
  • 4 tablespoons Worcestershire sauce
  • 4 tablespoon ground yellow mustard
  • 4 clove garlic, finely minced, about 2 tablespoons
  • 2 teaspoon salt
Instructions
  1. Divide everything into two separate one gallon freezer bags, shake it up, seal, label and put in the freezer
  2. On the day of cooking, dump it into your slow cooker and cook on high for 4 to 6 hours, or low 6-8 hours, depending on your specific slow cooker
  3. If you want, you can add 1/2 cup of chicken stock to have more sauce, but the liquid from the frozen meat and vegetables melting should give you enough liquid to work with
  4. Every slow cooker is different, so just watch yours the first time you make it. Makes 2, 6-8 Servings.

Pork and Veggies - Crock Pot -THM S

1 lb Pork Roast, cut into 1/2 inch strips
1 Onion, chopped
1 Green Bell Pepper, sliced
2 stalks celery, chopped
1 small acorn squash, cubed
½ pound Fresh Mushrooms, sliced
1 8oz can Chicken broth
1.5 Tbsp Apple Cider Vinegar
1 tsp Salt
2 tsp Worcestershire Sauce
Combine ingredients in a large ziptop bag, freeze. Thaw contents of bag and place in a slow cooker. Cook on low 6-8 hours. Serve over hot "rice" - ie. riced cauliflower or shredded and steamed cabbage. Serves approx. 5-6 people.

Sausage and Bean Supper - Crock Pot THM E

Sausage and Bean Supper

Tweeked from this recipe.
1 lb Ground Turkey  - be sure to rinse the meat. I add seasoning to ground turkey to get my sausage flavor
1 Onion Chopped
1 Celery Stalk Chopped
1 Tbsp Worcestershire Sauce
1.5 tsp Dry mustard
¼ cup sweetner of choice - xylitol
1 can Tomatoes with Chili Peppers
1 can Butter Beans, rinsed and drained
1 can Kidney Beans, rinsed and drained
1 can Garbanzo Beans, rinsed and drained
In a large skillet brown sausage and onion, drain and allow to cool (totally optional, sausage will cook in the crock pot but there will be excess oil if you don’t pre-brown it). Place sausage in a ziptop bag with other ingrediants. Freeze. thaw contents of bag and place in a slow cooker. Cook on low for 4 hours, stirring occassionally.
Serve with shredded cheese over rice. Serves approx. 5-6 people.

Meat Stew - Crock Pot Menu - THM S

2 lbs Meat (beef, pork, whatever is on sale), cubed
2 Onions, chopped
1 small acorn squash, cubed
3 Zucchini, sliced
2 Celery stalks, chopped
2 Red Bell Peppers, chopped
2 tsp Salt
.5 tsp Pepper
2 tsp Minced Garlic
1 14 oz can Canned Tomatoes
1 can Beef broth
Put all ingredients in a large ziploc bag and freeze. Thaw bag and add contents to slow cooker. Cook on high for 4 hours or on low for 8. Stir occassionally.  Serves approx 5-6 people.

Bean Stew - Crock Pot Meal - THM E

6 cups chicken broth or vegetable broth (add when putting in crock pot)
1 cup dry beans, picked over and rinsed
2 medium carrots, peeled and finely diced
1 small onion, finely chopped
2 celery stalks, finely diced
3 tablespoons uncooked brown rice
2 tablespoons minced garlic
1 teaspoon herbes de Provence or dried thyme
½ teaspoon salt
1/8teaspoon ground white or black pepper
Combine ingredients in a gallon zip lock bag (minus the broth). Freeze. Thaw, add broth and bag to slow cooker. Cover and cook on low for 8 hours or on high for 4 to 5 hours. Serves 4-5 people.

Jambalaya - THM S

3 cups chicken broth
4 bell peppers
1 large onion, chopped
1 large 32oz., can of diced tomatoes (leave in juice)
2 garlic cloves, diced
2 bay leaves
1 lb large shrimp raw and deveined (optional - I don't add it to mine)
4 ounces chicken diced
1 pkg spicy Andouille sausage
1 head of cauliflower graded into a fine rice consistency
2 cups okra
2 tsp Cajun Seasoning

Split all ingredients except the chicken broth into 2 zip lock bags.  On the day of cooking add chicken broth and cook on low for 6 hours.

Chicken Curry with Cabbage and Peppers - THM E

3 lb boneless chicken, cubed
4 cups milk - I used Almond.
4 tsp curry powder
2 small yellow onions
2 medium red bell pepper, chopped
1 medium green bell pepper, chopped
1 head of cabbage, chopped

Divide ingredients between 2 bags, in a ziplock bag, minus the milk. Freeze. Cook on low for about 4 hours until done. Add milk during the last 15 minutes of cooking.

Serve over rice or noodles.

No Potato Beef Stew - THM - S

2 lb Beef Cubed
2 cups chopped onion
4 large peeled and diced turnips (optional)
1 can tomato paste
4 cloves garlic
4 tsp dried thyme
4 medium yellow squash chopped
6 stalks celery chopped
4 bay leaves
4 tsp dried parsley
4 TBSP ACV
6 cups green beans
2 cups beef broth
salt and pepper as desired.

Divide all ingredients between 2 bags, minus the broth and freeze.  On cooking day add broth and cook for 6 hours on low.

Crock Pot OAMC session THM Prep work

This is what you will need to do the day BEFORE:

MEAT
2 lb. beef cubed
4 lbs Meat (beef, pork, whatever is on sale), cubed
3 1/2 pounds of boneless chicken, cubed (And extra pound if subbing out the Shrimp)
1 lb large shrimp, raw and de-veined (optional, I don’t usually add this. I just use another pound of chicken instead)
2 lb Pork Roast, cut into 1/2 inch strips
2 lb cooked Ground Turkey  - be sure to rinse the meat and add the Sausage seasoning.

Veggies
24 cloves of minced garlic – jar of minced garlic
1 onion, sliced
17 onions chopped onion
2 small yellow onion, chopped
8 medium green bell pepper, chopped
4 large green pepper, cut into strips or cubes, about 4 cups
2 large red pepper, cut into strips or cubes, about 2 cup
6 medium red bell pepper, chopped
1 head of cabbage, chopped
4 large peeled and diced turnips

2 -14 oz can Canned Tomatoes
2 cans Tomatoes with Chili Peppers
2 cans Butter Beans (Lima Beans), rinsed and drained
2 cans Kidney Beans, rinsed and drained
2 cans Garbanzo Beans, rinsed and drained

Spices and Herbs etc
8 tablespoons THM brown sugar
1/2 cup sweetner of choice - xylitol
Gluccie to thicken
8 TBSP garam masala spices
Olive Oil
1 16oz can Chicken broth
2 cups beef broth
10 tablespoons Worcestershire sauce
7 TBSP apple cider vinegar
4 tsp Thyme
Cajun Spice
Parsley
Ground Mustard
