Going to try a week with the crock pot or the bread machine so I can ease up on the work load since I am a busy mom to 7. :-)

THM Gluten Free German Apple Cake

My birthday is coming up and I wanted to be able to enjoy my birthday cake without pain. So I messed a little with the recipes here, to make something I can eat without pain.

So I reduced the sized and this is what I came up with....

Gluten Free German "Apple" cake.

1 egg
2 TBSP butter
3TBSP Truvia
1/4 cup ground flax seed
1/8 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp nutmeg
1/8 tsp salt
1/8 tsp vanilla
1/4 cup shredded apple
4-6 Walnuts or Pecans chopped

Frosting:
1 1/2 TBSP cream cheese or strained Greek Yogurt
Truvia to taste

Grease large coffee mug or custard bowl. I used butter in mine. Then mix ALL the ingredients for the cake. Dump in the mug/bowl.  Bake at 350 for 20 minutes or until a fork comes out clean.  Make frosting while you are waiting for the cake to bake.

THM Almond Joys

I have been playing around with the original Skinny Chocolate in the Trim Healthy Mama book .  I have finally came up with a few "new" to me recipes.  I will eventually share ALL of the recipes, but for today, just the Almond Joy version - the 2nd row in the picture.

Almonds
1/2 Unsweetened Coconut
3 TBSP Truvia - ground in the coffee grinder
1/4 cup cocoa
1 cup coconut oil
pinch salt
dash of Almond extract

Combine 5 tsp Truvia, 1/2 cup cocoa, and 1/2 cup coconut oil, pinch of salt, and dash of extract.  I just wisk it together until combined. If the coconut oil is not liquid I warm it on the stove.  I then pour into the bottom of 24 mini muffin pans. I have the silicon ones. I toss in the freezer and mix up the NEXT layer.

Combine 4 tsp Truvia, 1/2 cup unsweetened coconut, and 1/2 cup coconut oil, pinch of salt, and dash of extract.  I just wisk it together until combined. If the coconut oil is not liquid I warm it on the stove.  I grab the chocolate layer from the freezer, usually it is cold enough by the time I get it all together. I add the coconut layer. Push 2 Almond in the top. Return to the freezer until firm.

Once they are frozen I pop them BACK out and put 3 into a small snack sized baggy so I can grab them for a quick snack on the go. :-)

GGMS w/ mint

Frappe

The crust:

1 cup of almond flour
1/4 cup of butter, melted
2 tsp of homemade Truvia.

Bake at 350 degree for 15 or 20 min, or until begins to golden.

The filling

2 - 8oz pkgs of 1/3 less fat cream cheese, at room temp,
3/4 of a can of pumpkin,
6 tablespoons of homemade Truvia.

Cream the filling ingredients in a mixer until smooth, add to the cooled crust, sprinkle with cinnamon and put in the fridge. ENJOY!!!

Book Review: Without a Word: How a Boy's Unspoken Love Changed Everything by Jill Kelly

Without a Word was a powerful story of a mom's love for her son.  I wasn't real sure how I would like the book. I know nothing of the "famous" football player since I am not a sports fan. I had no idea what the story was really about. I cried right along with the author when her son died. I know the feelings all too well, having lost 3 children to m/c. It was such a sweet story about how they eventually turned to the Lord and were able to use their son's death for good. Excellent story. I am so glad I picked it up.

Book Review: The Charge: Activating the 10 Human Drives That Make You Feel Alive by Brendon Burchard



The Charge is just what I needed to get myself back into the swing of things. I needed a reminder that I needed to get up and GET going if something was going to get accomplished. The author was very inspiring and had so much energy you could just feel it by reading the book. Highly recommend to anyone in a slump.

Book Review: Getting to Yes


 Getting To Yes by Roger Fishers

I am really not sure WHY I wanted to read this book. But I did. I almost didn't finish it.   Not that the book was bad, but it really didn't help me in my situation... or should I say it was not what I was expecting it to be.  I am not sure if I learned much of anything that I didn't already know.   I am thinking I need to be in the busines world to understand why this is a "great book".  Negotiating isn't done in anger. It won't work.  I think most days people think they can just plow there way to what they want, no matter who it hurts.  No one is going to change their mind unless you can get them sold on your idea. That is very elementary. I didn't need a book to tell me what.

I took an un-expected break. My computer cord died so I had to wait to get another one. So now that my cord is here I can start back up. If you are familiar with the Trim Healthy Mama plan, my meals, unless marked, all fit in the S eating plan. So far the E eating plan and I don't agree. LOL!
