St Patrick Day's Cabbage Rolls

   We had a little fun for St. Patrick's Day. I have never really done much, but in an effort to be a little more creative I did make a big deal about this year.

As you can see we had "rainbow veggies" and we made jello for the Pot O Gold. YUM.



Irish Cabbage Rolls

1 green cabbage head
4 cups Mashed potatoes
1 cup cubed ham

I warmed the cabbage leaves so they would roll. Then I placed about 1/4 cup of mashed potatoes and sprinkle the ham down the middle and roll like a sushi roll.
