Low Carb, Gluten Free, Sugar Free, Peppermint Chocolate Cookie THM S
1 TBSP Melted Butter
1/2 tsp mint flavoring
1 TBSP Truvia, or Stevia to taste
1 egg yolk - or white. Just not both
Dash of salt
2 TBSP Almond Flour
1 TBSP Cocoa powder
1 TBSP Ground Flax
Sugar Free Chocolate Chips (I use 12)
1 Sugar Free Peppermint candies crushed - optional.
Blend all but the chips and mint pieces. Spread on a buttered/oiled plate. Sprinkle crushed candy and chocolate chips on top. Microwave for 45 seconds. or bake at 350 for about 8 minutes.
