Mexican Corn Salad

This is one of my FAVORITE recipes from the Raw cookbook I used many years ago. Having all the ingredients raw makes it even better, but since I don't I am happy to settle for this version.

Mexican Corn Salad

1 medium onion chopped
1 red or orange pepper chopped
1 can black olives
1 can or corn
Dash of Pasley (cilantro works just fine, I just hate it!)
Salt and Pepper to taste
1 tsp cumin
Dash of lemon juice

Mix together and let marinade for about 2 hours before serving. We like to eat it as a salad, but it is yummy with tortilla chips as well. YUM YUM!
